The "sleep in" breaky
Nothing feels better than waking up and knowing you don't have to rush out the door to work. You get to turn on your boiling water, knowing that you get to make a little more than one cuppa joe. You get to drink your first one while prepping a divine breakfast, your favorite music playing in the background. Knowing you don't have to wake up listening to the sound of those last few 130 bpm songs your are adding to your spin class playlist for that day, but instead a nice mellow acoustic... possibly something you can learn on the keys later.
THIS is my kinda morning. Sunday Brunch.
EGGS BENNY (without the benny)
You know when you FINALLY poach an egg right? Well, this happened to me for the first time! This simple benny was made from veggies on the bottom, and eggies on the top. I spread some balsamic reduction and salt and pepper instead of making the hollandaise, because I am trying to cut the dairy and gluten from the meal.
Bottom layer is easy. Grab some tomato and slice it nice and thick. That is your "bread". Place some smoked salmon and sauteed spinach on top.
Middle layer is even more delicious. Saute some mushshrooms and onion together in the pan with olive oil on low heat. Add goat cheese if you are feelin friskay.
Poach your eggs very last, and make sure you let that water boil with a bit of vinegar in it! Keep it hot and let them sit for about 3 minutes. Strain and take them out, placing them on top of the mushrooms and onion. If you have some avocado in your fridge, this goes on right before the egg.
Once you have it plated, garnish it with a little basil and balsamic reduction, and VOILA! You are ready to sit and enjoy your lazy weekend brunch :)
